Ingredients for the meatballs:

1 lb Ground chicken
1/3 cup Panko breadcrumbs
1/4 cup Sun-dried tomatoes
1/4 cup Crumbled feta
1/4 cup Finely diced red onion
1/4 cup Chopped mint
2 cloves Garlic minced
1 Egg
2 tbsp Milk
  Salt & pepper

For the tzatziki:

2 Persian cucumbers shaved
5 oz Plain greek yogurt
1/4 tsp Garlic powder
1/2 Lemon juice
1 Lemon zest
1/2 tsp Extra virgin olive oil
2 tbsp Fresh dill chopped
  Salt & pepper

For the orzo:

1.5 cups Orzo
2 cups Spinach
1 tbsp Olive oil
1/2 Lemon juice
1/2 cup Crumbled feta

Instructions

Cooking mode

    For the balls

  1. Roll into balls and pan sear in avocado oil over medium heat both sides until golden and finish off in the oven at 180C for 12 minutes
  2. For the tzatziki

  3. Combine all ingredients in a bowl to make
  4. For the orzo

  5. Make the orzo, then combine with the spinach until done.
  6. Serve warm and top with your meatballs and tzatziki
