1 Red pepper cut into medium pieces
1 Yellow pepper cut into medium pieces
1 Red onion cut into medium piece
10 Fresh baby or cherry tomatoes
225g Chorizo ring cut into thick slices
650g Ready-made gnocchi
30g Packet fajita mix
4 tbsp Olive oil
5 Slices of burger cheese
30ml Milk
  Salt and ground black pepper

Instructions

Cooking mode

  1. Heat the oven to 200C fan
  2. Place the chopped peppers and onion in a roasting tin with the tomatoes, chorizo and gnocchi.
  3. Add the fajita mix to a small bowl.
  4. Stir in the olive oil until you have a smooth runny paste.
  5. Roast in the oven for 30 minutes, turning the mixture over once or twice.
  6. 5 Minutes before the traybake is due out of the oven, make the nacho sauce.
  7. Tear the cheese slices into 3 or 4 pieces and place them in a microwave proof bowl.
  8. Add the milk.
  9. Microwave for 1 minute, stirring once halfway through.
  10. Stir until smooth.
  11. When the gnocchi and veg are roasted, remove them from the oven and season with salt and pepper.
  12. Turn them over until coated in the chorizo oil.
  13. Drizzle with the nacho sauce before serving with salad and tortillas.
