Ingredients

600g Chicken mini fillets, uncooked
1 Medium bell pepper(any colour), diced
2 Medium onion, diced
3 Garlic cloves, grated
180g Easy cook long grain rice, washed and drained
3 Large vine tomatoes, peeled and chopped
1 can Corn
1 can Black beans, washed and drained
25g Tomato puree
1 sachet Old el paso fajita seasoning mix(roasted tomato and pepper)
1 tsp Sweet paprika
1 tsp Garlic granules
  Pepper + salt to taste
1 1/2 tbsp Olive oil
400ml Vegetable stock( made up from stock cube)
90g Grated mature cheddar cheese
  Chopped parsley for garnishing, optional

Instructions

Cooking mode

  1. Add olive oil to a pan and sauté the onion and garlic.
  2. Marinade the chicken in the spices, and add to the pan together with the bell pepper.
  3. Once brown, add the tomato puree and the diced tomatoes. Add spices to taste.
  4. Add the rice, the vegetable stock, the beans and the corn.
  5. Wait until the rice is done and add the cheese.
