For the salad

1 Ripe mango
1 Small cucumber
6 Radishes
1 Small red onion
1 Red chilli
Small bunch Coriander
50g Roasted peanuts
3 tbsp Toasted sesame seeds

For the dressing

1 tbsp Lime juice
1 tbsp Rice vinegar
1 tbsp Soy sauce
1 tbsp Chilli crisp
1 tbsp Toasted sesame oil
Pinch Salt

Instructions

Cooking mode

    For the salad

  1. Peel and thickly slice the mango. Halve the cucumber lengthways, scoop out the seeds and slice into crescents. Chop the radishes. Thinly slice the red onion and chilli. Roughly chop the coriander and peanuts.
  2. Toast the peanuts and sesame seeds in a dry pan until fragrant. Set aside to cool.
  3. For the dressing

  4. Whisk together all the dressing ingredients until smooth.
  5. Add the mango, cucumber, radishes, onion, chilli and coriander to a large bowl. Pour over the dressing and toss gently. Top with the toasted peanuts and sesame seeds.
