Courgettes With Breadcrumbs And Pecorino

Ingredients

  Enough small firm courgettes, sliced 1/2 cm coins
4 tbsp Fresh breadcrumbs
3 tbsp Grated pecorino or use parmesan, plus extra to serve
  Olive oil, enough
1 tbsp Dried oregano
  Pinch of chilli flakes, to taste
  Salt & pepper, to taste
  Lemon juice, to taste

Instructions

Cooking mode

  1. Mix everything in a bowl, minus lemon juice.
  2. Thread onto skewers.
  3. Roast in hot oven 210C until softened & burnished.
  4. I also gave mine a quick flash under very hot grill to give extra colour / crunch to the breadcrumbs.
  5. Remove from oven & squeeze over with lemon juice, and extra olive oil to serve.
  6. Threading the courgettes on the skewer creates space for hot air to circulate courgettes, intensifying flavours, in a good way.
