Ingredients

1 cup Raw quinoa
12oz Frozen cooked edamame

Vegetables

1/4 Small head of red cabbage
2 Medium carrots
1 Red bell pepper
1 bunch Scallions, minced greens only

Dressing

Juice & zest from 1 Lime
1 tbsp Neutral oil
2 tbsp Honey
3 tbsp Sriracha
1 tbsp Cold-pressed peanut oil
1/2 tsp Salt
  Water as needed to thin as needed

Instructions

Cooking mode

  1. Cook the quinoa according to package instructions.
  2. In a large bowl, combine the cooked quinoa, frozen edamame, chopped red cabbage, grated carrots, diced red bell pepper, and minced scallion greens.
  3. In a separate bowl, whisk together the lime juice and zest, neutral oil, honey, sriracha, peanut oil, and salt.
  4. Pour the dressing over the salad and mix well to combine.
  5. Adjust the consistency with water as needed.
