Ingredients:

2 Large sweet potatoes
600g Lean ground beef
  Extra virgin olive oil
1 x Taco seasoning of choice

Salad:

  Lettuce, chopped
  Tomato, diced
  Onion, diced

Guacamole

1 Large avocado
1-2tbs Coriander, finely chopped
1 tbs Light sour cream or greek yoghurt
  Dash of garlic powder, lemon juice & salt to taste

Additional toppings:

1-2 tbs Light sour cream per bowl
  Shredded cheese

Instructions

Cooking mode

  1. Prepare the Pico by adding all ingredients to a bowl and mixing.
  2. Do the same with the guacamole. Store both in the fridge.
  3. Meanwhile dice the potatoes into small cubes.
  4. Put them in a large bowl and drizzle with 1/2 tbs of olive oil and 1 tbs of the taco seasoning.
  5. Mix till well combined then place in the air-fryer for approximately 18 minutes. Give a quick mix half way through.
  6. While the potatoes are cooking, prep your ground beef.
  7. Add to a large pan with a drizzle of olive oil over medium-high heat.
  8. Break up the mince then add in remaining taco seasoning.
  9. Mix and add more as needed. Optional to add a little water or stock for extra moisture.
  10. Cook for 8-10 minutes stirring frequently until cooked to your liking.
  11. Remove potatoes from the air fryer and let cool for a few minutes.
  12. Assemble your bowl with sweet potato, taco mince, cheese (melt it), chopped lettuce, pico (or chopped tomato & onion), guacamole and sour cream.
  13. For extra yums try a drizzle of Nandos perinaise sauce.
  14. Enjoy 🥰
