Garlic And Paprika Pulled Chicken Taquitos

Ingredients

600g Chicken breast, uncooked
1 tsp Sweet paprika
  Black pepper and salt
1 tbsp Olive oil
  1 red onion, thinly chopped
  3 garlic cloves, minced
  Garlic and paprika taco seasoning mix
400ml Tomato passata
60ml Water
70-80g Grated cheese
10 Mini wheat and corn tortillas
1 tbsp Olive oil

Instructions

Cooking mode

  1. In a mixing bowl, add the uncooked chicken, sweet paprika, salt, black pepper and 1 tbsp of olive oil, combine well and bake, air fry or pan fry until chicken is cooked thoroughly.
  2. Once is slightly cooled down, shred or cut into bite size pieces.
  3. Heat 1 tbsp of olive oil in a pan, add the chopped onion and saute for 2-3 min, add the minced garlic and fry for few seconds, then add the tomato passata, water and the garlic and paprika taco seasoning, mix well and simmer for 5-6 min, add the shredded chicken and grated cheese and combine.
  4. Place two large spoonfuls of filling in a line along each tortilla and roll tightly and place seam side down in an oven safe casserole or baking tray. Sprinkle some grated cheese on top.
  5. Bake in pre heated oven(170-180C) until crispy and cheese is melted.
