Ingredients

Middle eastern kofta kebabs

2lb Minced chicken
2 Onion
1 Red bell pepper
1 Green bell pepper
Handful Green coriander
1 Bulb of garlic
4-5 Green chillies
1tbsp Ghee or olive oil
1tbsp Chili flakes
  Salt to taste
1tbsp Coriander powder
1tbsp Cumin powder
1tsp Garam masala powder
1tbsp Paprika powder
1tbsp Chili powder
1tsp Black pepper powder
1tbsp Tomato paste
  Pita bread

Salad

1 Diced tomatoe
1 Cucumber
1 Onion
Fresh Green coriander
1/2tsp Salt
1/2tsp Black pepper powder
2tbsp Olive oil

Garlic sauce

1cup Plain yogurt
1cup Mayonnaise
2tbsp Lemon juice
3-4 Garlic
  Salt to taste
1/2tsp Black pepper powder
  Fresh herbs parsley or dil

Instructions

Cooking mode

  1. In a chopper, chop the onions, red and green bell peppers, green chilies, and garlic.
  2. Squeeze out any excess water from the chopped vegetables and discard it.
  3. In a large bowl, combine the vegetable mixture with minced chicken, chili flakes, salt, coriander powder, cumin powder, garam masala, paprika, chili powder, black pepper, tomato paste, coriander and ghee.
  4. Mix well and cover then set in the refrigerator for 1 hour or 24hr for best results.
  5. Form the mixture into kebabs or patties using your hands.
  6. Grill or pan-fry the kebabs over medium heat for about 5-7 minutes on each side, until cooked through and browned.
  7. Enjoy the kebabs hot with pita bread, garlic yogurt sauce, and salad.
  8. In a bowl, combine the diced tomato, cucumber, onion, and chopped coriander.
  9. Add salt, black pepper, and olive oil. Toss gently to mix.
  10. Mix all ingredients in a bowl for the garlic sauce.
  11. Season with salt, black pepper powder and herbs.
  12. Chill for 30 minutes before serving.
