Pizza Salad With Garlic Herb Dressing

For the salad

1/2 Small aubergine
Handful Cherry tomatoes
1/2 Red pepper
1/2 tsp Oregano
1/2 tsp Garlic granules
20g Sliced pepperoni
35g Slice sourdough
  Little grating parmesan
Handful Basil
30g Shredded mozzarella
80g Shredded chicken breast

For the garlic herb dressing

2 tbsp Thick yoghurt
Pinch Oregano
Pinch Garlic granules
  Salt
  Pepper
1 tsp White vinegar

Instructions

Cooking mode

  1. Preheat your air fryer or oven to 200°C fan.
  2. Toss the diced aubergine, cherry tomatoes, red pepper and pepperoni with oregano, garlic granules and a good pinch of salt.
  3. Spread into your air fryer basket or onto a baking tray.
  4. Roast for 12–15 minutes in the air fryer or 18–20 minutes in the oven, until softened, sticky and slightly caramelised.
  5. Scatter the diced sourdough and a little grating of parmesan over the top.
  6. Return to roast for another 4–5 minutes until the croutons are crisp and golden.
  7. While that’s roasting, stir together the yoghurt, garlic powder, oregano, vinegar, salt and pepper for the garlic and herb dressing.
  8. Add a splash of water if you want a looser consistency.
  9. Once everything is out of the oven, toss through the fresh basil, shredded mozzarella and cooked chicken so the warmth starts to melt everything together.
  10. Serve warm with a generous drizzle of dressing.
