Ingredients

2 nests Flat rice noodles
2 tbsp Peanut butter
Juice 1 Lime
200ml Light coconut milk
2 tsp Garlic paste
2 tsp Ginger paste
1 tbsp Sriracha
½ tbsp Garam masala
50ml Soy sauce
1 tbsp Tomato paste
1 tsp Maple syrup
1 tsp Sesame oil
150g Tofu

Spice mix

1 tsp Chilli powder
1 tsp Garlic
1 tsp Onion powder
1 tsp Smoked paprika

Optional protein boost

2 tbsp Nutritional yeast

Instructions

Cooking mode

  1. Preheat your oven to 200c.
  2. In a small bowl mix together ½ tbsp soy sauce, 1 tsp sesame oil and the spice mix. Crumble your tofu into the bowl and coat well.
  3. Transfer to a lined baking tray and bake for 25 minutes, tossing halfway.
  4. Mix all the ingredients from the peanut butter down to the tomato paste (+nutritional yeast if using).
  5. Cook your noodles according to packet instructions (keeping ½ cup of water when draining).
  6. Make sure to rinse the noodles thoroughly to prevent sticking.
  7. Add your sauce into a pan to heat through, simmering gently until thickened.
  8. Add in the noodles, stirring to coat.
  9. Finish with the maple syrup and an extra tsp of sesame oil.
  10. Divide between 2 bowls and top with the tofu crumble.
