Ingredients

850 gr Beef shortrib
4 tbsp Olive oil
1 Large carrot
2 Sticks celery
1 Large onion
400 gr Tin good quality tomatoes
250 ml Beef stock
  Salt & pepper
  Few sprigs of fresh thyme/rosemary
4 Cloves garlic
250 ml Red wine
  Parmesan rind
140 gr Tomato puree

Instructions

Cooking mode

  1. 1) Brown meat on all sides (3-4mins each side)
  2. 2) Take off the pan and in same pan cook veg for 15-20mins.
  3. 3) Add garlic & herbs and tomato puree
  4. 4) Deglaze with red wine and allow to simmer the alcohol off.
  5. 5) Add stock, tomato tin & parmesan rind. Add back your meat and cover and bake in oven at 150 for at least 3.5-4hrs or in slowcooker all day on low.
